I agree; Viva Pinata is a great game; it didn't sell as well as it should have but I think many overlooked it because they figured it was geared for children. While it's easy enough for a child to sit and play, and the bright colors and animated pinatas will keep them interested for a long time to come; but at the same time it offers enough depth that even adults love this game. It's not one of those where you need to spend hours just learning controls and the level to which you take the gameplay is entirely up to you...the game ramps up at the speed you want it to...
Note on VP: If you have someone [in my case a S.O.] who thinks the xbox isn't for them sit them down with a control and Viva Pinata this game will change their mind. We've now grown to a 2 xbox house thanks to VP 
I personally haven't played Rayman, but I picked it up on sale for ~$30 awhile ago and my SO has been playing it. I can safely say that if it's anything like the original for the Sega Genesis then this game will provide me with many hours of gameplay.
As far as Star Wars; I picked this one up awhile ago after hearing glowing reviews; myself personally I didn't get much into it. I still have it sitting around and am waiting for a raining day to give it another try.
